Cheese blintzes are a special occasion breakfast, one that fits the bill for a Valentine’s Day brunch. They take a little bit more work than your just-add-water pancakes (my go to), but all in all they’re not too complicated. You can make the filling in advance and have the toppings as self-serve, which just leaves the crepes themselves. Blintzes are also easy to scale up or down making them suitable for a big group or just the two of you.
- 15 Crepes (approximately)
- 15oz ricotta cheese
- 6oz cream cheese
- 3 tbsp sugar
- zest of one orange
- Mix the ricotta, cream cheese, sugar and orange zest together in a bowl and set aside.
- After making the crepes (recipe found here), fill each one with the cheese filling and wrap together like a burrito.
- Add any extra toppings, such as fresh berries, whipped cream, or powdered sugar.
The beauty of this recipe is that it is easily adjustable and perfectly suitable for experimenting. For example, instead of the orange zest, you could add lemon zest, or vanilla extract, or any other flavor that you think works.
