These soft Drop Sugar Cookies are simple, sweet, chewy, and a little bit crinkly with a hint of vanilla. They are the perfect classic drop sugar cookie.
In a large bowl, combine the softened butter and granulated sugar. Add the egg, egg yolk and vanilla and stir to combine.
Add the baking powder, baking soda, salt and flour and combine.
Roll the dough into balls using 1½ tablespoons of dough for each cookie. Place the cookies on a baking sheet.
Bake for 9 minutes.
Notes
Measuring Flour: There is no universal method for measuring flour with a measuring cup, and results can vary widely. I use a measurement of 140g per cup of flour. For the best cookies, measure by weight using a kitchen scale. If you do not have a kitchen scale, use the dip and sweep method used by America's Test Kitchen.
Cookie Size: To portion out the cookies, you can use a tablespoon to measure the first one and then approximate the rest, or use a cookie/ice cream scoop. I like to roll the dough between the palms of my hands to get the circular shape for these cookies. This also creates surface tension, which helps to prevent spreading.
Test Cookie: It's always best to make a single test cookie first before baking an entire batch when trying a recipe for the first time so that you can get a sense for how the cookies work in your oven or if you need to add more flour.
When Are The Cookies Done?: Bake for 9 minutes and no more to ensure soft, chewy cookies. You do not want the edges to brown. The centers can be slightly soft when removing the cookies from the oven. They will continue to firm up and cook on the hot baking sheet after you remove them from the oven.
