Roasted Honeynut Squash is super sweet, small in size, and easy to roast in the oven. It’s an intensely flavorful and delicious side, perfect for individual portions.
Carefully cut off the tops of the honeynut squashes, then slice them in half vertically. Scrape out the seeds with a spoon.
Place the honeynut squash on a baking sheet and brush with the olive oil. Using a pastry brush if needed. Brush with maple syrup, if using (optional). Sprinkle with salt.
Roast at 425°F for 25 minutes or until soft and fork tender.
Notes
Slicing off the tops of the honeynut squashes makes it much easier to slice them in half vertically without needing to cut through the stems.High heat helps to encourage caramelization which concentrates the sweet flavor of the butternut squash.
