Chicken Spinach Wraps with Homemade Ranch Dressing
These Chicken Spinach Wraps are made with easy rotisserie chicken, spinach, vegetable slaw, and tomatoes in a whole wheat wrap with a creamy and better-than-store-bought homemade ranch dressing.
2tablespoonnuts/seeds such as sunflower seeds or sliced almonds
4whole wheat tortillas
Instructions
Homemade Ranch Dressing
In a medium bowl, combine the sour cream, Greek yogurt, buttermilk, lemon juice, garlic powder, onion powder, salt, black pepper, chives, and dill.
Chicken Spinach Wraps
In a large bowl, add the diced rotisserie chicken, spinach, vegetable slaw, cherry tomatoes, and nuts/seeds. Add ¼ to ½ cup homemade ranch dressing and toss to combine with the chicken and vegetables. Add additional dressing and toss according to taste.
Warm the tortillas in the microwave for 10 seconds. Arrange the chicken spinach salad mixture on the center of the tortilla, tuck the ends of the tortilla in, and roll to wrap the tortilla over the filling. Cut in half and serve.
Notes
Don't Overfill the Tortilla: It'll be harder to roll into a wrap that stays closed.
Make Ahead for Lunch: These can be made in the morning and brought to work for lunch later in the day, as long as it is refrigerated in between.
Dressing: Adjust the spices in the dressing according to your taste preferences. If you're not a fan of dill, you can reduce it by half or leave it out altogether.
