These Chicken Spinach Wraps are made with easy rotisserie chicken, spinach, vegetable slaw, and tomatoes in a whole wheat wrap with a creamy, better-than-store-bought homemade ranch dressing.
This recipe is ready in 10 minutes with no cooking involved.

Because you’re using store-bought rotisserie chicken as well as a bag of prepared vegetable slaw, these wraps take only a few minutes to assemble. That leaves you a bit of time to make the homemade ranch dressing, which is also quite quick. It only involves measuring a few items and chopping fresh chives and dill. Super simple.
The upside to making your own dressing is that you can make it without using processed oils like soybean oil or canola oil, which are typically found in store-bought shelf stable dressings.
I’ve also made this same dish, but stuffed into Homemade Pita Bread rather than a whole wheat wrap. I like to make a big batch of pita bread and store the pitas in the freezer for an easy and quick dinner or lunch, which works perfectly with this Chicken Spinach salad mixture.

Below are the ingredients needed to make the Chicken Spinach Wraps and the Homemade Ranch Dressing, along with tips for each ingredient and the best places to find them.

- Rotisserie Chicken: Look for rotisserie chicken at Costco if possible. It is significantly less expensive for a larger chicken. You can also use any leftover chicken from another meal (including chicken breast or dark meat).
- Spinach and Vegetable Slaw: You can use prepared spinach and vegetable slaw. They can usually be found (separately) in bags in the fresh lettuce and salad section of the grocery store.
- Tomatoes: I prefer using cherry tomatoes, but you can use any tomatoes that you like. The Hiiros brand cherry tomatoes (found at Costco and Whole Foods) are particularly flavorful.
- Nut/Seeds: Adds crunch and protein. Feel free to use any that you like, such as almonds, sunflower seeds, pistachios, pumpkin seeds, etc.
- Tortillas: I use whole wheat tortillas, but you can use any version that you like, including flour tortillas or corn tortillas.
- Variations: Feel free to toss in bell peppers, like red bell peppers, thinly sliced red onions, green onions, or avocado.
Homemade Ranch Dressing:
- Sour cream, Greek Yogurt, and Buttermilk: All three create a creamy and tangy sauce. I like to use whole fat Greek yogurt rather than mayo to avoid the processed oils in the mayo.
- Lemon Juice: Adds acidity. Use anywhere between 1 and 2 teaspoons to taste.
- Garlic Powder, Onion Powder, Salt, Black Pepper: Spices to add flavor to the dressing.
- Fresh Chives and Dill: These add freshness and really help the dressing taste like a classic ranch dressing.

Step 1. Make the Ranch Dressing: In a medium bowl, combine the sour cream, Greek yogurt, buttermilk, lemon juice, garlic powder, onion powder, salt, black pepper, chives, and dill.

Step 2. Combine the Chicken Spinach Ingredients: In a large bowl, combine the chicken, fresh spinach leaves, vegetable slaw, cherry tomatoes, and nuts and seeds.
Step 3. Toss with Dressing: Add ¼ to ½ cup of dressing and toss with the chicken and spinach salad. Taste and add more dressing as needed according to your taste preferences.
Step 4. Build the Wrap: Warm the tortillas in the microwave for 10 seconds. Assemble the wrap by placing the chicken spinach mixture in the center of the tortilla. Tuck the sides in and roll the tortilla over the filling. Cut in half and serve.
